Pineapple Delight

Pineapple Delight

1 box yellow cake mix
4 teaspoons  Coconut Extract
1 sm. box vanilla instant pudding mix
1 can (20 ounces) crushed pineapple
1 tub (8 ounces) frozen whipped topping (thawed )


Preheat oven to 350°F. Prepare cake mix as directed on box, stirring 3 teaspoons of the extract into batter before baking. Pour into greased 13x9 baking pan.


Bake 30 minutes or until toothpick inserted in center comes out clean. Cool completely in pan.

Prepare pudding mix as directed on box, stirring in remaining 1 teaspoon extract. Spread pineapple and juice over the cake. then spread pudding over the pineapple. Mix the cool whip until smooth.  Frost with whipped topping over the pudding. Refrigerate 1 hour or until ready to serve.


I had this recipe for many years from my Auntie Frieda.  I made it and gave half to my daughter's boyfriend's family to take home.  My daughter had texted me and said while the boyfriend's mom was eating the cake she said "Oh Lordy!!"  
With those words... it basically explains how delicious this cake is!

Orange Creamsicle Cake

Orange Creamsicle Cake


1 box white cake mix
Orange Extract
1 small box vanilla pudding mix
1 small box orange jello mix
1 cool whip (thawed)


Mix white cake mix according to the directions on the box, using a 9x13 cake pan.
Bake and let cool for 15 minutes.
using the other end of a wooden spoon or straw, poke holes all over the cake.
Mix orange jello with 1 cup hot water.
Spoon orange jello all over cake.
refrigerate for 30 minutes.
Mix vanilla pudding with 1 cup milk in large bowl.
Add cool whip and 1 tsp. orange extract to pudding.
Mix well with mixer.
spread mixture over cake.

If you love the taste of orange cream popsicles you'll love this cake. It tastes just like it!  My mom made this cake while she was visiting and i was in heaven!  Its so good my husband and children dont want to share it and keep it a secret. But my point is.... its so good I had to share it!!!  





Simple Pasta

Simple Pasta

1 large bag Rigatoni Noodles
1 block butter
grated parmesian cheese
garlic salt
pepper
dried basil 


Boil rigatoni noodles until done.  Strain noodles (do not rinse).  Put noodle back in pot. Add butter, mix and melt butter. Add garlic salt, pepper, dried basil, and parmesian chees to your liking.

Very simple pasta. It makes a great side dish or even a meal!  I got this recipe from my cousin Anela.  I just added basil to the recipe to give it a lil more italian taste to it.   

Fried Chicken

Seasoning:
Garlic Salt
Pepper
Parsley
2 Tbs White Vinegar

Mix seasoning all in a bowl with chicken.  Then coat 1 by 1 with flour and deep fry until brown.

This is a very simple recipe. My family wipes it all out and leaves no leftovers everytime i make this!  Nothing like homemade Fried Chicken! I dont like to brag, but i personally think its better than any fried chicken you get at the fast foods!!

Chi Chi Dango Mochi

Chi Chi Dango Mochi

1 pound mochiko (16 oz box)

2 cups sugar

1 teaspoon baking powder

1 can coconut milk (12 oz)

1 ¾ cups water

1 teaspoon vanilla

red food coloring (or color of choice)

katakuriko (potato starch), for dusting  Or cornstarch




Combine mochiko, sugar, and baking powder. In a separate bowl, blend coconut milk, water, and vanilla. Gradually add wet ingredients into the dry mix,  mixing well.



Remove half of mixture, adding 2 drops of food coloring. Pour colored mixture into a greased 9 x 13 pan. Cover tightly with foil and bake for 20 minutes at 350 degrees.



Pour remaining mixture over the colored layer. Cover and bake 30 minutes or until set.


Let cool completely, before cutting into bite-size strips with a plastic knife or pizza cutter. Lightly dust the pieces with katakuriko or cornstarch.

Kids happy I made this.  They asked me, " why I never made this before!"  LOL!   my children love mochi! 


Kalua Pig in Crock Pot (slow cooker)

Kalua Pig

1 (6 pound) pork butt roast


1 1/2 tablespoons Hawaiian sea salt

1 tablespoon liquid smoke flavoring
 
 
Pierce pork all over with carving fork.
Rub salt then liquid smoke over meat.
Place roast in a slow cooker.

Cover and cook on Low for 16 to 20 hours, turning once during cooking time.

Remove meat from slow cooker and shred.
 
I was craving some hawaiian food and I found this recipe online. It tastes just as close as it gets! Just like the real thing! I suprised myself when it was done how wonderful it came out! So Juicy!!!
This is definately gonna be one of those everyday dishes in our household!

Melissa's Casserole

Melissa's Casserole

5 boneless skinless chicken thighs
1 large frozen bag broccoli cuts
1 cup mayo
1 large can Campbells Cream Mushroom Soup
1 cup cheddar cheese (grated)
salt and pepper

Boil chicken in water until done.
chop chicken in pieces and put in 13 x 9 pan
pour frozen broccoli over the chicken
In a med. size bowl; mix cheese, mayo, soup, salt and pepper to taste.
spread mix over the broccoli.
(creating layer after layer)
cover with foil
bake 45 mins. 350 degrees
sprinkle cheese on top of mix and bake for another 15 mins (uncovered)


The name "Melissa's Casserole"  stuck.  I got this recipe from my sister who's name is Melissa.  It is very tasty and creamy!  Great to eat over rice or alone!  My children all request Auntie Melissa's Casserole all the time and even ask her to make it when she is here in San Francisco visiting! :)
